Erythritol is a sugar alcohol, which is treated differently in the NIP calculation from country to country.
In NZ, it does not need to be included in the "Sugar" value, which is "0" on your product.
It is, however, included in the carbohydrate calculation - this value is made up of the sum of sugars, sugar alcohols, fibres, starches etc. (in fact, this is why your product is almost entirely carbohydrates).
Not all of these are actually relevant to people concerned about carbs. For example, insoluble fibre is generally considered "good" and not a problem for people following a low-carb diet. So when reading the NIP, the "carbohydrate" value does not necessarily reflect the carbs people are worried about. To know whether and how much sugar, starch etc is included in the product, reading the ingredient list is sometimes more useful!
