Scrumptious Anzac Bites - Perfect Parade Hunger Busters
With Anzac Day comes Anzac biscuits.
But why not put a little spin on things, thanks to our friends at Lunchbox Inc.
Introducing… Anzac bites! These little morsels are super quick and easy to make. All you need is a food processor and a small bowl!
Give it a go and arm the tribe with delicious snacking at the parade.
Lest we forget.

Makes: 12 balls
Preparation time: 10 mins
INGREDIENTS:
- 1/2 cup almond meal/flour
- 1/4 cup whole almonds
- 1/2 cup quick cooking oats
- 1/4 cup rolled oats
- 1/4 cup desiccated coconut
- 1 Tbsp psyllium husk (optional but helps keep balls together)
- 1/2 tsp cinnamon
- 1 tsp vanilla essence
- 1/4 cup of rice malt syrup
- 1 Tbsp coconut butter (or coconut oil)
- If needed, 1-2 Tbsp water or almond milk
- Extra desiccated coconut for rolling the bites in
DIRECTIONS:
- In the bowl of a food processor, put almond meal/flour, almonds, oats, coconut, psyllium husk and cinnamon and pulse to combine (not too much as you still want some nuts and oats to chew on).
- Combine rice malt syrup, coconut butter, and vanilla essence in a small bowl, then slowly pour into the food processor as it is mixing on low.
- The mixture should now be of a consistency you can mould into balls with warm hands, however, if you feel it is still too crumbly, add a Tbsp at a time of almond milk until you can form balls.
- Remove blade from processor and make 12 evenly sized balls from the mixture. Roll in extra coconut and transfer to the fridge for 1 hour before eating.
Will keep in the fridge for up to 2 weeks.
