Give it a go and arm the tribe with delicious snacking at the parade.

Lest we forget.

Makes: 12 balls

Preparation time: 10 mins

  • 1/2 cup almond meal/flour
  • 1/4 cup whole almonds
  • 1/2 cup quick cooking oats
  • 1/4 cup rolled oats
  • 1/4 cup desiccated coconut
  • 1 Tbsp psyllium husk (optional but helps keep balls together)
  • 1/2 tsp cinnamon
  • 1 tsp vanilla essence
  • 1/4 cup of rice malt syrup
  • 1 Tbsp coconut butter (or coconut oil)
  • If needed, 1-2 Tbsp water or almond milk
  • Extra desiccated coconut for rolling the bites in

  1. In the bowl of a food processor, put almond meal/flour, almonds, oats, coconut, psyllium husk and cinnamon and pulse to combine (not too much as you still want some nuts and oats to chew on).
  2. Combine rice malt syrup, coconut butter, and vanilla essence in a small bowl, then slowly pour into the food processor as it is mixing on low.
  3. The mixture should now be of a consistency you can mould into balls with warm hands, however, if you feel it is still too crumbly, add a Tbsp at a time of almond milk until you can form balls.
  4. Remove blade from processor and make 12 evenly sized balls from the mixture. Roll in extra coconut and transfer to the fridge for 1 hour before eating.

Will keep in the fridge for up to 2 weeks.
